My oh my... 2 months ago we were preparing for Halloween, last month we were wrecking pumpkins, and now (as you're reading this) it's December, as I would like to call it – the Sunday of the year. If you don't know, I have a mini section on Be Wise Magazine called Cëe's Kitchen, where I share recipes. Be Wise Magazine's creator Ceciley Hallman is such an amazing lady (albeit I've never met her in real life, yet), I am eternally grateful to be featured by them. Be Wise Magazine is such a wonderful and purposeful project (if I could call it that) because they empower people – Being wise begins with understanding who we really are. In order to be wise and make smart choices in our life we need to know we are of worth.
For Be Wise Magazine's December 13/January 14 issue I wanted to do something Christmas related. I was looking for inspiration and while browsing through Pinterest, I was inspired to create the Melted Snowmen gingerbread cookies. While doing this, I realised how apt it would be for Christmas parties in Singapore. Even though it's December, it's still so warm and humid! No wonder Mr. Snowman and his buddies would melt.

Things you'll need:
Gel food colouring - Red, Blue and Black (you can use other colours if you like).
For the royal icing:
4 cups of icing/powdered sugar
3 egg whites
1 teaspoon of Vanilla extract
Cream of Tartar (I wonder how the name came about since it's nowhere near creamy and it's not the same as tar tar sauce).
Since royal icings hardens really quickly, I suggest you prepare it
while your cookies are almost ready. Mix all the ingredients together
until even. I used a normal spoon to spread the royal icing over my cookies, but you can always use a piping bag if you want to.

For the head:
Well, marshmallows would do the trick ;)
To decorate the head use the gel food colouring to draw on anything you
like – a pair of eyes and hands, a nose and maybe even a bow.

As you may know, I like to use ready-mixes because they save me lots of time and the proportions will never go wrong. Preheat your oven to 180°C.
Instructions for cookie base:
Prepare gingerbread cookie mix (follow instructions behind cookie mix box).
Leave in the fridge for about 15 - 20 minutes to cool.
Once cooled, take them out and cut with cookie cutter (I used a round cookie cutter).
Bake them in the oven for about 6 minutes at 160°C (since different ovens have different heating mechanism, the time and temperature I've given should be used as a gauge).
